  • 1 cup shiitake mushrooms finely chopped.
  • 1 8-ounce can water chestnuts, drained and finely diced.
  • 3 green onions sliced (white and green parts separated).
  • 1 teaspoon sesame oil.
For the Homemade Sauce
  • ΒΌ cup low-sodium soy sauce or tamari for gluten-free.
  • 2 tablespoons hoisin sauce.
  • 1 tablespoon oyster sauce.
  • 1 tablespoon rice vinegar.
  • 1 tablespoon honey or brown sugar.
  • 1 teaspoon sriracha or chili garlic sauce optional.
  • 1 teaspoon cornstarch.
  • 2 tablespoons water.

  • 1 large head butter lettuce or Bibb lettuce, leaves separated and washed.

Method

  1. Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic, grated ginger, and the white parts of the green onions. Cook for about 30 seconds until fragrant.
Step 4: Brown the Chicken
  1. Add the ground chicken to the skillet. Break it apart with a wooden spoon and cook for 5–7 minutes until fully browned and no longer pink.
Step 5: Add the Vegetables
  1. Stir in the chopped shiitake mushrooms and diced water chestnuts. Cook for another 3–4 minutes until the mushrooms soften while the water chestnuts remain slightly crisp.
Step 6: Pour in the Sauce
  1. Give the prepared sauce another quick stir and pour it into the skillet. Mix everything thoroughly and cook for 2–3 minutes until the sauce thickens and evenly coats the chicken mixture.
Step 7: Finish the Filling
  1. Drizzle in the sesame oil and stir in the green parts of the sliced onions. Cook for another minute, then remove the skillet from the heat.

  1. Spoon the warm chicken filling into chilled butter lettuce leaves. Sprinkle with chopped peanuts, sesame seeds, and additional green onions.
