Ingredients
  

  • 4 large russet potatoes scrubbed clean
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika optional, for extra smoky flavor
  • ½ teaspoon dried parsley
  • ¼ teaspoon cayenne pepper optional, for a spicy kick
  • Ranch dressing ketchup, or your favorite dipping sauce, for serving

Method
 

Step 1: Prepare the Potatoes
  1. Preheat your oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly since the skins stay on. Pat them completely dry with paper towels.
    Cut each potato in half lengthwise, then cut each half into thick wedges about ¾ to 1 inch wide.
Step 2: Soak the Potatoes (Optional but Recommended)
  1. Place the potato wedges into a bowl of cold water and soak them for 30–45 minutes.
    This removes excess starch, helping the fries become much crispier during baking.
    Drain and dry the potatoes thoroughly with clean kitchen towels or paper towels. Any leftover moisture can prevent crisping.
Step 3: Season the Fries
  1. In a large bowl, combine: Olive oil, Paprika, Garlic powder, Onion powder, Seasoned salt, Black pepper, Smoked paprika (if using), Dried parsley and Cayenne pepper (if using.)
Step 4: Arrange on the Baking Sheet
  1. Line a baking sheet with parchment paper if desired.
    Arrange the potato wedges in a single layer, leaving space between each fry. Avoid overcrowding, as this traps steam and prevents crispiness.
    For extra crispy fries, place them on a wire rack set over the baking sheet.
Step 5: Bake Until Crispy
  1. Bake for 20 minutes..
    Remove the pan and carefully flip each fry using tongs or a spatula.
    Return to the oven and bake for another 15–20 minutes, or until the fries are deep golden brown and crispy around the edges.
Step 6: Finish and Serve
  1. Taste and sprinkle with a little extra seasoned salt if needed.
    Serve immediately while hot with ketchup, ranch dressing, cheese sauce, or your favorite dipping sauce.

Notes

For Texas Roadhouse-style Cheese Fries, top the hot fries with shredded cheddar cheese and cooked crumbled bacon. Return them to the oven for 2–3 minutes until the cheese melts, then garnish with sliced green onions and serve with ranch dressing.
