Ingredients
  

  • 1 cup 226 g unsalted butter, softened
  • 1 cup 200 g light brown sugar, packed
  • ½ cup 100 g granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 cups 250 g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • ¾ cup chopped pecans lightly toasted
  • Optional ½ cup chopped dried pineapple for a tropical twist

Method
 

Step 1: Prepare the Oven
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Step 2: Cream the Butter and Sugars
  1. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy, about 2–3 minutes.
Step 3: Add the Wet Ingredients
  1. Mix in the eggs one at a time, beating well after each addition. Stir in the vanilla extract until fully incorporated.
Step 4: Combine the Dry Ingredients
  1. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Step 5: Mix the Dough
  1. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Avoid overmixing.
Step 6: Fold in the Mix-Ins
  1. Using a spatula, gently fold in the oats, shredded coconut, chocolate chips, chopped pecans, and dried pineapple (if using). Mix until everything is evenly distributed.
Step 7: Scoop the Cookies
  1. Use a medium cookie scoop or about 2 tablespoons of dough for each cookie. Place them about 2 inches apart on the prepared baking sheets.
Step 8: Bake
  1. Bake for 10–12 minutes, or until the edges are lightly golden while the centers still look slightly soft.
Step 9: Cool
  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

The cookies should look slightly underdone in the center when you remove them from the oven. They'll continue to set as they cool, giving you that signature chewy texture.
