Step 1: Prepare the Ingredients
- Peel and cut the pineapple into chunks. Wash the cilantro thoroughly, peel the garlic cloves, and remove the stems from the chilies. Juice the lime and orange.
Step 2: Add Everything to the Blender
- Place the pineapple, cilantro, garlic, chilies, mayonnaise, lime juice, orange juice, vinegar, olive oil, Dijon mustard, honey, cumin, salt, and black pepper into a blender or food processor.
Step 3: Blend Until Smooth
- Blend on high speed for 45–60 seconds until the sauce becomes creamy and smooth. Stop once or twice to scrape down the sides with a spatula if needed.
Step 4: Taste and Adjust
- Taste the sauce and adjust it to your preference. Add more lime juice for extra tanginess, another chili for additional heat, or a little honey if you'd like it sweeter.
Step 5: Chill Before Serving
- Transfer the sauce to an airtight container and refrigerate for at least 30 minutes. Chilling allows the flavors to blend together and improves the overall taste.
Step 6: Serve and Enjoy
- Serve the Poyo Poyo Sauce with grilled chicken, roasted vegetables, tacos, burgers, wraps, seafood, fries, sandwiches, or rice bowls. It also works wonderfully as a dipping sauce or marinade.
Notes
For the freshest flavor, use ripe pineapple and freshly squeezed citrus juice. The sauce tastes even better after resting in the refrigerator overnight.
