Step 1: Prepare the Baking Tray
- Line a baking sheet or large tray with parchment paper or a silicone baking mat. Lightly grease it with butter or nonstick spray to prevent sticking.
Step 2: Measure the Ingredients
- Measure all ingredients before you begin. Candy making moves quickly, so having everything ready makes the process much easier.
Step 3: Make the Maple Candy Base
- In a heavy-bottom saucepan, combine the granulated sugar, light corn syrup, whole milk, heavy cream, maple syrup, butter, and salt. Stir over medium heat until the sugar dissolves completely.
Step 4: Cook the Mixture
- Attach a candy thermometer and continue cooking without constant stirring. Allow the mixture to reach 245°F (118°C), the firm-ball stage. This usually takes about 15–20 minutes.
Step 5: Add the Flavorings
- Remove the saucepan from the heat. Stir in the maple extract, vanilla extract, and baking soda. The mixture will foam slightly, which is normal.
Step 6: Mix in the Peanuts
- Immediately fold the roasted peanuts into the hot maple mixture until every peanut is evenly coated.
Step 7: Shape the Candies
- Using a tablespoon or small cookie scoop, drop small clusters onto the prepared baking sheet. Work quickly because the mixture begins to firm up as it cools.
Step 8: Cool Completely
- Allow the candies to cool at room temperature for about 30–45 minutes until they are firm and no longer sticky.
Step 9: Serve and Enjoy
- Once fully set, separate the clusters if needed and enjoy your homemade Brach's Maple Nut Goodies with coffee, tea, or as a sweet snack.
Step 10: Store Properly
- Store the candies in an airtight container at room temperature for up to 2 weeks. For longer storage, refrigerate them for up to 1 month and let them come to room temperature before serving.
